The season of fresh has begun and we couldn’t be more excited to share it with you! Kicking off May with loads of flavor, fiber and plant-based protein, here is your Meatless Menu for each #MeatlessMonday of the month!
Let your Cinco De Mayo roll over into the Seis with this awesomely Mexican meatless munchie! Cutting no corners when it comes to flavor, this recipe uses quite the spice list! Brown sugar, cumin, coriander, both smoked and sweet paprika make magic with sweet potato, corn, tomato, onion, garlic and black beans. Topped with an interesting choice of tahini, you’ll be saying “¡Que Rico!” in no time.
Can you say “Mother’s Day Must-Try”? Cause we sure are! If your family likes to eat they are sure to agree, this brunch pizza is the real deal. Starting with a homemade crust, you’re going to need to get started a day in advance just to allow your dough to rise sufficiently. As if that isn’t enough investment in mom, be sure you tell her you made the bechamel sauce and avocado aioli from scratch too! When you’re ready to get cooking, you flatten your dough and layer on bechamel, potato, caramelized onion, kale and cheese. After 5 minutes in the oven, add your eggs and bake some more. The finishing drizzle of aioli, basil and red pepper flakes make this stunning pizza a testament to your love for mom and your skills in the kitchen.
Talk about eating the rainbow! These gorgeous Spring Rolls are a fun, tasty and nutritious way to get a wide variety of vitamins and minerals in a convenient and deliciously-dippable lunch or dinner. Packed with red and yellow bell pepper, carrot, purple cabbage, avocado and your choice of greens or sprouts, this recipe pairs them with a tasty spicy mayo but you are free to use any sauce you want. Rolled up in a rice paper wrapper, assembly can be tricky at first but entirely worth mastering for such a no-cooking-required tasty treat.
Here’s one spice lovers will definitely ask for seconds of! As most Jerk foods are, this recipe marinated eggplant in a true concoction of spices. Coriander, all spice, cayenne, thyme, garlic, ginger, lime, chili pepper and more, you can easily go easy on the hot stuff to adjust to a spice level you are happy with. The best part about this recipe is that it cooks incredibly quick on the grill, about 3-5 minutes each side, so assembling your sauce is literally the hardest part! Serve these spicy eggplant steaks over your favorite rice, cauliflower rice or even salad! Just be sure to have some water nearby just in case the Jerk gets ya!
