Your Meatless Menu For March!

What happens when Meatless Monday, Taco Tuesday and pizza night join forces? This super yummy and delicious meatless taco pizza! Featuring Tex-Mex seasoned jackfruit from The Jackfruit Company, Goya salsa, cotija cheese, corn and black bean salsa and a drizzle of GoAvo avocado spread on top of a plain Caulipower pizza crust, a meatless family-friendly dinner has never been easier.
In honor of St. Patrick’s Day we wanted to feature something both green AND super, maybe even super-duper delicious! While you can use any toast you like, this recipe does it right by first toasting baguette, then roasting broccoli and garlic. While those cook, you make your hot honey – a stellar combination of honey, white wine vinegar and red pepper flakes. As if that’s not exciting enough, the roasted garlic is mashed into the ricotta. From then on – ricotta on toast, broccoli on ricotta, drizzle with honey and enjoy those slices of heaven! Slainté!
A recipe that is so easy, you should add the ingredients to your shopping list right now! Though directions include toasting Italian-seasoned panko crumbs for some added depth of flavor, all this recipe really requires is whipping your cheeses, onion and parsley together, filling mushrooms and popping in the oven for 15-20 minutes. Don’t forget to top with balsamic glaze for the “full effect”!
We’ve seen a lot done with cauliflower, but this one gets extra points for creativity! While the sun-dried tomato pesto cauliflower is what drew us to it, the accompanying ingredients are fantastic even without it! Complete with protein from the egg, fiber (and flavor) from the cauliflower and an onslaught of vitamins, minerals and texture from onion and tomato make it a full and 100% photo-worthy meal!
