Spice things up in the kitchen with a veggie-filled meatless meal! Ready to rock with a different recipe for each #MeatlessMonday, we made sure to pick winner so good you won’t even miss the meat!
Talk about a very-veggie meal! This creative recipe takes an already established vegetarian favorite, falafel, and spices up the recipe with bright and bold beets! This wonderful addition gives falafel balls a beautiful bright pink/red hue that truly tastes as good as it looks. Not only does this recipe cover the protein, fiber and phytonutrient-filled beet falafel balls, but you also get the breakdown for the meal which includes a vegan tzatziki dressing, quinoa, asparagus, cucumber, avocado, radishes and tomato atop mixed greens.
Pizza is an easy go-to for a meatless meal, but this tart take the entire “cheese on bread” to new heights! Firstly, this tart is made on a phyllo dough-parmesan crust, which already makes it special. Secondly, ricotta is combined with parmesan, egg yolk, garlic, thyme, salt and a little red pepper to make a sauce that is truly gourmet. Final assembly is as simple as topping with fresh tomatoes, a little more thyme and salt before baking into a true Meatless Monday masterpiece.
This one will show them that “meatless” doesn’t mean “amazingless”! This gorgeous cauliflower wellington truly is a show stopper, calling for a roasted head of cauliflower that is coated in a delectable mushroom gravy before being wrapped up in pastry and baked to perfection. Not only is this recipe conceptually creative, but the key to its amazing flavor is the mushroom gravy which calls for both porcini and chestnut/cremini mushrooms that are sauteed together with garlic before being combined with cream cheese, vegetable bouillon, miso pasta, thyme and rosemary. Definitely worth trying for Easter not only for being meatless, but more-so for looking as amazing as it tastes!

Not only is this fully-loaded pasta salad sure to be tasty from the large assortment of Mediterranean ingredients included, but it will also be ready to eat in no time, with just 20 minutes to prep while your pasta boils. To make it a real nutritional home-run with some more protein, add extra cheese or give protein pasta, tofu, seitan or tempeh a try!
Time and simplicity wise, pasta goes a long way in the kitchen. A good sauce on pasta is heavenly – but when that pasta is tortellini and that sauce is a combination of two greats baked together with roasted broccoli, diced tomatoes, kalamata olives and lots of cheese – amazingness is achieved.
