The Shell

Hard Shells vs Soft Shells

There are two common types of tortillas most commonly used as taco shells. Soft shells are flour tortillas cooked until soft by grilling or steaming. They are sold ready-to-eat in a baggie and can be made into hard shells by baking at 275º F until they begin to brown – about 10-15 minutes. Hard shells are corn tortillas that are crisp-fried or baked until hard or crunchy.

Alternatives to conventional taco shells include homemade veggie tortillas or sandwich wraps, cheese shells, almond or coconut flour tortillas and lettuce or romaine leaves. Even waffles are trying their hand at taco shell-ing!

1.) Carne Asada

Marinated beef (skirt steak, sirloin steak, tenderloin steak or rib steak) that is grilled and sliced, usually with a sear to impart a charred flavor.

Simple Carne Asada Marinade:

  • 2 limes juiced
  • 4 cloves garlic crushed
  • 1/2 cup orange juice
  • 1 cup chopped fresh cilantro
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup vegetable oil
  • 1 jalapeno minced
  • 2 tablespoons white vinegar
  • 2 pounds flank or skirt steak marinated in mixture for 2 – 14 hours

Due to their emphasis on fresh, flavorful ingredients, tacos are friendly for both vegetarian and even vegan diets.

Similar to black beans, chickpeas are an excellent source of plant-based protein, with a half cup having almost the same amount of protein (7.5 grams) and a little less fiber (6 grams).

Taco Must Try - Queso Fresco

With a texture similar to feta, queso fresco is a young cow’s milk Mexican cheese with a salty, milky taste and slight tang. An older, dryer version is cotija, but both are a must-try on tacos or on top of beans and in salads.
