Vegetable Ragut

Ingredients

  • 2 Medium Zucchini cut to ¾” dice
  • 2 Medium Yellow Squash cut to ¾” dice
  • 1 Red Bell Pepper cut to ¾” dice
  • 1 Yellow Bell Pepper cut to ¾” dice
  • 1 Large Spanish Onion cut to ¾ “ dice
  • 4 Medium Tomatoes seeded and cut to ¾” dice
  • 1 -12 oz can of diced tomato
  • 2 sprigs of Thyme
  • 1 Sprig Rosemary
  • Salt & Pepper to taste

Directions

  1. Clean and cut all the vegetables.
  2. Saute the onions and the tomatoes in a hot pan for 2 minutes, then add all other chopped vegetables and continue to cook for another 3 minutes.
  3. Add the can of tomatoes, reduce the temperature, cover and let cook for 15 minutes.
  4. Add the Rosemary and Thyme and continue to cook covered for another 30 minutes, or until all vegetables are fork tender.
  5. Serve over pasta.
