Recipe: Saint Nectaire Cheese, Leek and Mushroom Pie
Puff Pastry (enough to spread in pie dish)
8 Paris mushrooms
5 oz Saint-Nectaire cheese
6 3/4 oz cream
1 tablespoon sour cream
1.) Precook the pastry in pie dish.
2.) Cut leeks into small sections and sweat in a pan over low heat in butter or olive oil. Add salt and pepper.
3.) Cut the mushrooms and garlic finely and add to pan with the leeks.
4.) Stop cooking when the mushrooms are cooked and the leeks are tender.
5.) In a bowl, add the cream, eggs and sour cream. Whisk and season to your liking.
6.) Place the leek & mushrooms mixture and dough into pastry crust and top with slices of Saint-Nectaire.
7.) Cook for 30 minutes/until browning on top at 325º F
