Recipe: Personal-Size Jalapeño Popper Lasagna
2 jalapeños, seeded and diced
4 pieces of bacon, cooked and chopped
1/2 cup cream cheese, softened
1/2 cup shredded cheddar cheese, (reserve half)
1/2 cup pepper jack cheese, shredded
1/2 tsp garlic powder
1/2 tsp kosher salt
1/4 tsp black pepper
3 lasagna noodles, cooked & cut to the size of your dish or mug
1.) In a bowl, combine cream cheese, cheddar (reserve half), pepper jack, bacon bits, chopped jalapeño and seasonings.
2.) In a tall bowl or mug sized oven-safe dish (we used the Cravings by Chrissy Teigen Mini Cast-Iron Dutch Oven) sprinkle a pinch of the reserved shredded cheddar. Top with 1 lasagna noodle, then spread cream cheese-bacon-jalapeño mix. Continue in this order 2-3 more times until dish is packed.
3.) For oven-safe dish, bake at 375º F for 15-25 minutes until cheese is melted. For mug recipe, cover top with paper towel and microwave for 1 – 1 1/2 minutes.
4.) Enjoy in container you cooked in or flip upside down on dish.
