A bite-sized take on an Italian classic, these marinated caprese crostini are a great “anytime” appetizer.

Marinated Caprese Crostini


1 baguette, cut into slices
1 tbsp. olive oil
1 tbsp. balsamic vinegar
1 tbsp. chopped fresh flat leaf parsley
1 1/2 tbsp. chopped fresh basil
1/2 tsp. fresh oregano
salt to taste
pinch of sugar
2 cups halved cherry or grape tomatoes
4 ounces pearl mozzarella balls
balsamic glaze


1 hour 15 minutes




  1. In a large bowl, combine the olive oil, vinegar, herbs, salt, and sugar. Add the tomatoes and toss to combine. Add more salt and pepper to taste. Chill at least an hour or until ready to serve.
  2. While tomatoes marinate, arrange sliced baguette on baking sheet and toast at 400º F for 8-10 minutes/until browning.
  3. Toss tomatoes together with mozzarella while baguette slices cool.
  4. Spoon mixture onto baguette slices and garnish with additional basil and drizzle with balsamic glaze if desired.
