Grilled Jamaican Jerk Wings


20 chicken wings
⅓ cup – Sugar
¼ cup – Scallions, chopped
1 Garlic clove, minced
1 ½ tbsp – Dried thyme
1 tbsp – Paprika
1 tbsp – Allspice
1 tbsp – Ground ginger
1 tbsp – Salt
½ tbsp – Ground black pepper
1 tsp – Ground cinnamon
½ tsp – Ground nutmeg
¼ cup – Olive oil
Juice from 1 lime


4 hours




  1. In a bowl, mix the chicken wings with olive oil until they are coated evenly; Mix all remaining ingredients together then apply on the wings; Let marinate 2 to 4 hours;
  2. Preheat your grill for a two zone cooking having hot coals on one end and nothing on the other; for gas, turn only half your grill on medium-high heat.
  3. Place the chicken wings on the hot grate over direct heat and sear for 3 to 4 minutes per side; Move the wings to indirect/not lit side and close the lid; Cook for 30 to 45 minutes,  flipping once halfway. Check largest wings for doneness before proceeding to step 4.
  4. Remove the chicken wings from the grill and serve;
