Cucumber Feta Crostini


1 baguette, cut into slices
4 ounces crumbled feta cheese
1 ounce sliced olives

For Cucumber Salad:
12 large cucumbers, sliced
1/4 cup red onion, sliced thin
1 tbsp. olive oil
1/2 lemon, juice and zest
1 tablespoons dill, chopped
salt and pepper to taste
1 clove garlic, grated (optional)






  1. Arranged sliced baguette on baking sheet and toast at 400º F for 8-10 minutes/until toasted.
  2. While bread is toasting, combine all cucumber salad ingredients in mixing bowl.
  3. Spoon cucumber salad onto toasted crostini, top with sliced olive and crumbled feta and serve.
