Recipe: Chicken & Zucchini Salad Crostini
1 baguette, cut into slices
8 ounces Grilled Chicken Breast, cut to strips or chunks
For The Zucchini Noodle Salad:*
2 zucchinis, grated or spiralized
1/4 teaspoon salt
3/4 cups thinly sliced and roughly chopped red cabbage
1/2 large carrot, grated or spiralized
1/2 large red bell pepper, chopped
1 green onion, thinly sliced on the diagonal
1/4 cup cilantro, chopped
For The Dressing:
1/4 cup seasoned rice vinegar*
1 tablespoons extra virgin olive oil
1/2 teaspoons dark roasted sesame oil
1 clove garlic, minced
Pinch of red pepper flakes
- Arranged sliced baguette on baking sheet and toast at 400º F for 8-10 minutes/until toasted.
- While bread is toasting, combine all salad ingredients in mixing bowl. Mix dressing ingredients then add to salad and toss.
- Spoon zoodle salad onto toasted crostini, top with chicken chunks and serve.
