So instead of reaching for chicken the next time you’re in the mood for some cheesy, Italian parmesan foodie fun, grab a head of cauliflower and get to work on a hearty, filling parmesan made by roasting off the cauliflower, preparing a basic sauce (or using your favorite pre-made), topping with cheese and broiling until melty and brown!

Filled with couscous and chickpeas with sweet potato, kale, spinach, carrot, cucumber, zucchini, and bell pepper in a host of fresh herbs and spices, this #meatlessmonday meal is ready in under 40 minutes and sure to please. First step is to prepare the kale, spinach and herbs with oil and lemon. Then you’ll sauté and steam the sweet potatoes, chickpeas and vegetables until tender. Lastly, prepare your couscous. Put it all together and serve with your choice of dressing – we would recommend apple cider vinaigrette!

Simply roast your pumpkin until tender in the oven and prepare your pasta and sauce on the stovetop in an oven safe pan/dish. Add your pumpkin and stir before topping with the bread crumbs and cheese and bake until golden and crispy. Serve with parsley and black pepper!

White Bean Buffalo Dip

A stellar recipe for any Monday night football, you won’t miss the chicken thanks to the smooth, creamy, hearty white beans! All you need for this delicious dip is white beans, cream cheese, greek yogurt, mozzarella cheese, cheddar, your favorite buffalo sauce and cilantro and / or green onion for serving. Ready in under 40 minutes, simply blend the dip ingredients up in a food processor before incorporating the cheese and baking until bubbling and golden brown along the edges. For dipping, choose with crostini, tortilla chips, pita chips, carrots and/or celery! YUM!
