Your Meatless Menu For January

Harissa Roasted Acorn Squash

As the hectic holidays subside and the cold sets it, we’re revving up the comfort food factor on our Meatless Monday’s for January!

Spicy Red Pasta With Lentils

Spicy Red Lentil Pasta

We’re turning up the heat for the first Monday of 2020 with this spicy red pasta with lentils. Getting its heat from red chili flakes, this tomato sauce is rich with red lentils, garlic and carrots. The trick with the lentils is to cook for 15 minutes for “al dente”, and 20-22 minutes for tender. The only thing this plant-based protein-packed pasta is missing is a nice piece of crusty bread on the side. Bellissimo!

Harissa Acorn Squash

Harissa Roasted Acorn Squash

The foodie world has never been so interested in Middle Eastern and African ingredients, and both harissa (a spicy chili paste) and bulgur (a hulled durum wheat) fall into those categories. That said, this is one trendy recipe! Featuring seasonal acorn squash roasted in a harissa-butter mixture, the squash is served over seasoned bulgur with a tasty parsley-yogurt sauce. Not only is this recipe visually beautiful, the spicy squash with cool yogurt sauce and savory bulgur is a flavor and texture experience nothing short of gourmet.
