Hailing all the way from Mesopotamia, farro is an ancient wheat grain that is an excellent source of protein, fiber and nutrients like magnesium, zinc and B vitamins. “Farro” is an Italian umbrella term for the 3 types of grains einkorn, emmer and spelt. Sold dry and cooked like rice until soft and chewy, it has a nutty flavor and unique, chewy texture. You can use it many of the same uses you would rice, quinoa, buckwheat and barley. The combination of roasted sweet potato and kale in this farro salad makes it super good-for-you while the tasty lemon tahini dressing makes nothing-but delicious.

There are few things better on a cold day than a cheesy, saucy dinner, and this dish is just-that! The recipe kicks-off by mixing a unique chipotle-pineapple sauce in a food processor before sauteing onion and eggplant. From there, half the sauce, pineapple chunks and jalapeño are simmered with the onion and eggplant before being divvied up and rolled into tortillas. Top with extra sauce and cheese before baking 25 minutes and voila! A hearty meatless dinner that can warm up even the coldest day!

Simply roast your mushrooms, sauté your spinach and toast your bread crumb-garlic-shallot mixture. The rest is as easy as filling the mushrooms with the marinara, spinach and bread crumb-coated goat cheese and baking for 10-15 minutes. Tre magnifique!
