As much as a no-bake lasagna sounds too good to be true, this recipe is a layer-lovers summertime dream come true! Filled with a whipped lemon ricotta, instead of layering your ingredients to be baked in one large pan, this is more of a D.I.Y. meal, with each piece of lasagna able to be assembled build-your-own style. The process is simple too! Cook your lasagna noodles, whip your ricotta, saute your veggies, assemble and enjoy! It’s an excellently filling meatless meal that leaves room for any meat eaters to add their layer of sausage, bolognese, etcetera while you can stick true to your #Meatless motivations!
Halloumi is one of the coolest cheeses out there, because instead of melting over heat, it holds its shape and browns to crispy goodness! This makes it an awesome ingredient to cube and use on kabobs. This unique recipe has you marinate the halloumi in a basic pepper-garlic-oil mix, before arranging onto skewers with bell pepper, zucchini, red onion, tomatoes, and any other veggies you desire. The kicker to this recipe though is the savory chipotle-lime peanut sauce, made with peanut butter, lime juice, honey, garlic powder and chipotle pepper. Deeelish!
Bursting with flavor and good-for-you ingredients, these sweet potatoes are an amazing #meatless AND vegan way to spice up your Meatless Monday! Beginning with roasting the sweet potatoes and chickpeas (which you could do on the grill to make it more summer-friendly), these two superfood complex carbs are topped with not 1, but 3 different tasty toppings. The first is an exotic garlic and herb sauce made with hummus, lemon, dill, garlic and sea salt. The next is a lemony parsley-tomato salad, and the last optional-but-interesting chili garlic sauce. There is a lot going on, but when the result is this tasty we absolutely dig it!
We know the combo of walnut and cauliflower might seem questionable, but the way this recipe sautés them with other tasty ingredients until tender into pure thick saucy goodness makes this recipe a #MeatlessMonday must-try! Made entirely on the stovetop, onion, bell pepper and cauliflower are cooked with a tasty seasoning combo of ground mustard, garlic powder, salt, tomato sauce, ketchup, brown sugar and Worcestershire sauce. Add in your chopped walnuts and let cook until thick and bubbly, about 4-6 minutes. All that’s left from there is piling it onto your choice of buns with whatever toppings you like – dill pickle slices as the recipe suggests, or we like cole slaw. 😍
