Pasta is great. Cheese is great. That’s why ravioli is simply the greatest, especially when you pair it with mushrooms and shallots cooked in butter, garlic, thyme and sage with a splash of balsamic vinegar. If that combo doesn’t sound like a one-way ticket to flavor town, we don’t know what is. The BEST part of this dish though? Have it ready in 25 minutes.

Vegan Potato Curry (Dum Aloo)

There is nothing like a warm, earthy curry to soothe your body, mind, soul and appetite. This dish is full-on vegan, but we doubt you’ll hear anyone complaining with the tremendous flavors of fennel, cardamom, bay leaf, cloves, ginger, garlic, spicy chilis, cumin, chili powder, coriander, turmeric, cinnamon and a cilantro garnish. Despite this laundry list of spices, the recipe is pretty easy, with the most difficult part being a light amount of pureeing of the cashews into paste and the tomatoes and onions into sauce.

Caponata Flatbread

Topped with tomatoes, eggplant, red pepper and ricotta, this flatbread is a step up from any-old mozzarella and marinara pizza. Taking less than 25 minutes, start by cooking your dough, then the veggies. Once cooked (you can grill or roast), your veggies are coated in a beyond-tasty vinegar, honey and caper sauce with parsley before being added to the layer of ricotta and crust for final baking.

Cheesy Twice Baked Sweet Potatoes

Creamy avocado, crunchy pepitas, protein-packed black beans and superfood sweet potatoes, this dish is everything a vegetarian meal should be! All you’ll need is about an hour from start to finish to get this on the table, and it’s fairly easy too. Just bake your potatoes, scoop out the inside to mix with black beans, cheese and seasonings while you crisp the potato skins under the broiler before you put the fillings back in and broil a few minutes to melty perfection. You can top these with avocado and pepitas as suggested, but we know we’d get down with some sour cream and/or hot sauce.
