Seasoned with the rich and deep flavors of chili and onion powder we know and love throughout Mexican cuisine, these stuffed peppers combine quinoa, black beans and refried beans to make a protein-packed meal the whole family will love. Easily made vegan by skipping the pepperjack cheese, this dish is perfect for a potluck or old fashioned sit down dinner with the family.
Just in time to put our New York grown pumpkins to good use, this isn’t your ordinary quiche! Made crustless by baking in a greased pie pan, this recipe combines sauteed pumpkin, kale, and mushrooms that are then baked into a quiche seasoned with garlic powder, cumin and paprika. With such a unique combination of ingredients and flavors, this is one recipe you have to try!
Unlike other potato pancakes, these spicy pancakes are sure to gather some “Ooo”’s and “Ahh”’s as a brunch, lunch or dinner side dish! This recipe calls for gluten free chickpea flour, but that can be substituted for all-purpose flour if needed.
