Enter this unique quinoa caprese bake! Made by layering a mix of protein-packed quinoa, roasted tomato, basil, garlic & shallot on the bottom of a baking dish then topping with fresh tomato and mozzarella, this dish is not only tasty but visually appetizing as well. Bake for 20 minutes, top with fresh basil and balsamic reduction for 4-6 servings of “buon appetito”!
