Uniquely sweet yet hearty root veggies make for a colorful & delicious dish in this cheesy gratin! Calling for sweet potato, parsnip and beets, you are free to swap in or out with carrot, turnip or white potato – anything with a similar cook time. A mandolin would be best for slicing these dense veggies into rounds. We love that each type of veggie receives its own seasoning of cream, parmesan and thyme and especially love that it is topped with shredded gruyere! Yum!

Spicy Black Bean Nachos

Nachos so good you’ll want to set out some forks! The star of the show on these nachos are black beans and this recipe holds nothing back in making them truly epic. Sure, some onion, garlic and cumin COULD do it, but this recipe goes above and beyond with authentic chipotles in adobo and a little straight-up adobo sauce! Once your black beans are cooked to perfection, dump em’ over a bed of your favorite chips, top with shredded monterey and pop it in the oven until cheese is melty. From there on out your nachos are your culinary canvas just waiting to be topped with your favorite salsa, guac, jalapeño, cilantro and anything else your heart desires.

You’re gonna want to double this recipe!

Portobello Steak with Whiskey Peppercorn Sauce

Your Meatless Monday just got fancy! These portobello steaks are a hearty and simple meat replacement that can be paired with just about any of your usual side dishes. All the mushrooms need is rubbing of oil and garlic and 10 minutes in the oven. While those are cooking, the sauce is easy to whip up. Calling for butter, garlic, whole black peppercorns, some flour, whiskey, milk and white miso paste, it would probably be amazing for both meatless and meaty applications. We like the pairing with mashed potatoes but could also suggest roasted cauliflower, especially if you’re trying to keep meals on the light side.
