Your Meatless Menu For October!
Is that crisp morning air, fallen leaves and pumpkin spice we smell? It is! Fall is here!
Chosen specifically for their ability to chase away the impending chill, here’s our list of fun, filling, Fall-icious meatless meals for every #MeatlessMonday of the month!
When it comes to fall, rich flavors rule, and that is no problem for this loaded recipe! While referred to as a “salad”, to us, this is more of a medley. Featuring tandoori-seasoned roasted chickpeas with roasted sweet potatoes, broccoli and red pepper, it’s a concoction of roasted veggie-goodness coated in a creamy garlic dill sauce. But with no lettuce or leafy greens in sight, we’ll respectfully refer to this dish as a “Mediterranean Power-bowl Of ‘YUM!’”
To us, Fall signals the return of our #BestInfresh New York State Apples, so we couldn’t give you a #meatless menu for the month without at least one apple recipe. With an abundance of sweet apple recipes, this savory tart is a refreshingly different way to enjoy Fall’s favorite fruit. While it may look fancy, this recipe makes two 6-inch tarts and is surprisingly easy… the hardest part by-far is caramelizing the onions! Filled with creme fraiche, Dijon mustard, shredded gruyere, thyme, caramelized onions and the sliced apple, you can have this seasonal treat ready in just 30 minutes!
Sorry, not sorry! We’re jumping into the #FallVibes head-first with this nothing-short-of gourmet squash salad. As deliciously vegan as it is meatless, you’re in for a world of complementary flavors and textures! While the recipe calls for roasted acorn squash, you can take your pick from our wide selection of squash fresh from Upstate New York, as all of them do well when roasted! The sweet roasted squash is then combined with crispy shallots, creamy and robustly-flavored vegan (try Miyoko’s) or traditional cheese (try a chevre or gorgonzola), crunchy pepitas and your choice of dried fruit. Finished off with a rich balsamic reduction, this is one mega #MeatlessMonday dinner you can whip up in just 30 minutes 🙌 (and save for any meatless guests during the holidays!)
One of the challenges of eating meatless can be getting enough protein. You can compensate for this with meat substitutes like tofu, tempeh, seitan, beans, nut butters and more, but one of the easiest and tastiest ways is by using protein powder! You can take the traditional route by adding it to smoothies, get funky by using unflavored protein in dressings or mixed into “breading”. Our favorite way by far however is to work it into some tasty baked goodies! As if pancakes aren’t awesome enough, adding in a tasty chocolate or vanilla protein powder takes them to the next level of “YES” taste AND nutrition-wise! But because it isn’t just any ol’ #meatlessmonday, these Pumpkin Protein Pancakes are a must-try!
