Pack a bag for a delicious day at the beach! Whatever you serve this month, these recipes make an excellent addition to any rotation for some #MeatlessMonday magic!
Ready in under 25 minutes, these hearty mushrooms are loaded with the fan-favorite flavors of enchiladas plus the weeknight delight of being great on the grill. Making them is as easy as cleaning your portobellos and coating them in olive oil, then filling the mushroom with corn and black beans, topping them with enchilada sauce and cheese and grilling for 5-6 minutes. While this could certainly be a meal in itself, we think pairing these with this awesome Mexican-Style Cauliflower Rice would make it a real fiesta!
The ideal recipe for a picture-perfect picnic, and so easy to put together! All you need for these awesome sandwich wraps are your favorite wraps, hummus, shredded lettuce, radish and carrot, some scallion, and perfectly fried halloumi. If you haven’t had halloumi before, it is such an interesting cheese to work with! Much like queso fresco, it holds up when fried rather than melting and gets a gorgeous and tasty crust in the process.
Some days you just want something a little different, and this recipe is exactly that! In this refreshing change of pace, extra firm tofu takes the place of chicken for tikka masala. Traditionally this dish involves marinating meat in spices before cooking to perfection in a tandoor oven. Since most of us don’t have one of those laying around, a grill will do just fine getting these kabobs close to the same rich, smoky taste of the real thing. Ready in under 30 minutes, the only Indian cuisine-specific ingredient you’ll need is garam masala – a great addition to any pantry for most Indian dishes.
Making for an excellent *treat* meal, this recipe makes great use of seasonal peaches atop a creamy and sweet yogurt filling with flaky pastry crust. As if that doesn’t sound awesome enough, this dish really takes things up a notch with a drizzle of balsamic reduction and chiffonade-cut fresh basil. With plenty of vitamin C from the grilled peaches and protein if you use Greek yogurt, we’d say this is a smart choice for the next time your sweet tooth comes calling!
