Ready in under 25 minutes, these hearty mushrooms are loaded with the fan-favorite flavors of enchiladas plus the weeknight delight of being great on the grill. Making them is as easy as cleaning your portobellos and coating them in olive oil, then filling the mushroom with corn and black beans, topping them with enchilada sauce and cheese and grilling for 5-6 minutes.
