Calling for scotch bonnets which can run rather spicy, feel free to swap with your favorite less-sweat-inducing pepper. Made by combining your peppers, with tomato, garlic, onion, scallion and Dijon mustard in a food processor, the compote is cooked just 3-4 minutes on a stovetop before being chilled to use as you would salsa. After the compote, this recipe is as easy as roasting or grilling your plantains and serving with a dollop of the compote, roasted peanuts, and mashed avocado with lime. An exotic recipe indeed, but the sweet plantain, spicy pepper compote, creamy avocado, tart lime and crunchy peanuts make for a must-try meatless meal perfect for whipping up when you’re craving something different or looking to impress a few guests.
This gorgeous recipe calls for naan, a leavened, oven-baked flatbread popular in Indian and Asian cultures, that is grilled to a slight char before being made into #meatless magic. Simply melt your fresh mozzarella over sliced peaches, top with basil, drizzle with balsamic glaze and you’re in for a night of deliciousness. Still missing something for you? Consider adding some fresh corn kernels or your favorite nuts.
At news of “salad for dinner”, some might be a little disappointed. But slap this gorgeous, flavor-filled bad-boy down and they’ll think twice! There is a lot going on in this recipe, a factor you can simplify by using you favorite pre-made Caesar dressing. After toasting and roasting your own Sourdough croutons and spicy chickpeas in the oven, this recipe is as easy as grilling your romaine quarters and topping with your dressing, croutons, chickpeas and some extra cheese (for good measure).
Another amazing reason to fire up the grill! This beyond-simple recipe appeals to anyone looking for something a little more substantial for #MeatlessMonday than grilled cheese alone. We love that this recipe doesn’t require you to sweat or squeeze the moisture from your eggplant, simply oil, season, and grill for 3-5 minutes each side. Once your uber-tasty eggplant is ready, assemble your grilled cheese and grill each side until golden. C’est magnifique!
Portobello mushrooms have to be the meatiest not-meat out there, and though their natural flavor is super satisfying as-is, this recipe does a superb job marinating it to be just as tasty as your favorite steak.
