Fall is right around the corner, and to ease you into it we have a bright, fresh and veggie delicious selection of #meatless meals to get you through all 5 Monday’s of the month!
We love this meatless meal for its mega-flavor and many veggies! Featuring turmeric quinoa and potatoes with, fresh kale, spicy paprika chickpeas and creamy avocado, this is a definition of a “power bowl”. Not only does this 30-minute meal taste great, but it’s nutritionally complete too – with lots of protein, fiber, complex carbs and healthy fats for a filling lunch or dinner!
Amazing flavor, a bit of spice and a whole lot of veggies! This vegetarian Jambalaya brings all the tastes of southern Louisiana cooking front-and-center. The cornerstone of this and many other Cajun and Creole dishes is the “holy trinity” – carrots, celery and onions – which set the base for a filling and flavor-filled meal no matter what they’re paired with. Bell pepper, roasted tomatoes, rice, peas and okra accompany the trinity and showcase a rarely-seen meatless version of the cuisine. Made spicy with cayenne, smokey with smoked paprika and downright-delicious with oregano, thyme and bay leaves, you can bet on everyone going back for seconds!
If there’s anything we love, it’s finger food. There’s just something about it that’s more fun than regular food, and these sweet and spicy cauliflower bites are a great example. Not only would they make an excellent munchie or appetizer on their own, but you could also pop them on a pizza, make some amazing tacos or roll them up in a wrap! Ready in a little less than an hour, you could technically save some time by skipping the batter, roasting the cauli and tossing it in the maple sriracha sauce; but we wouldn’t recommend it. The batter adds a heartiness that just can’t be replaced – even with a garlic lime ranch this good for dipping. 😍
Similar to veggie burgers, finding a satisfying vegetarian meatball replacement can be a challenge. If you never worked with tempeh before, this recipe is worth the experimentation! Not only is tempeh filled with plant-based protein and fiber, but it does incredibly well at taking on flavor when marinated. This recipe utilizes a pre-seasoned Smoky Maple Bacon–style tempeh alongside apple and smoked cheddar with caramelized onion and maple syrup for extra “yum!” Don’t have a panini press?
