Avocado Black Bean Quesadillas

Avocado Black Bean Quesadillas by Gimme Delicious

Packing a major nutritional punch with protein-packed black beans and full-of-healthy-fat-and-fiber avocado, these quesadillas get 2 major thumbs up for a dish that takes only 20 minutes! With the exception of avocado, all the ingredients are usual pantry & deli drawer staples. We would enjoy with a side of our fresh made salsa for a little extra kick to a great low-stress recipe.

Sun-Dried Tomato & Quinoa Spinach Salad

Super Salad by Cookie and Kate

This ain’t your ordinary salad! Complete with its own remarkably simple lemon dijon dressing, the only thing better than the flavors in this salad are the ingredients themself. A combination of quinoa and sliced almonds provide much-needed protein, sun-dried tomatoes add a delicious dose of vitamins and the bed of spinach seals the deal with fiber, iron and calcium. Are your meal-prep-salad-in-a-jar senses tingling or is it just us?
