The mighty vegetable! Low in calories but high in vitamins, minerals and fiber, it’s “the more the merrier” when it comes to the produce department! Just like Popeye and his spinach, vegetables, mushrooms, grains and other plant-based foods are essential for our bodies to grow and perform day-to-day functions. One great way to work more vegetables into your diet is to make one meal a week completely meatless! Not only will you get to enjoy more veggies and their benefits but it’s a fantastic way to try something new and shake up your dinner routine!

This genius veggie pad thai brings brown rice noodles, spiralized veggies and an easy homemade pad thai sauce together for a quick, satisfying and impressive dinner. Taking longer to prep the veggies than it does to cook, this meatless meal can be ready in about 20 minutes. Feel free to add any other veggie additions or substitutes. (Some sliced & sauteed portobellos maybe?)
Not only are these tacos visually gorgeous, but they pack a mean nutritional punch with the combination of kale, mushrooms and avocado. The cilantro yogurt sauce is also an extra treat! Since its made with greek yogurt you get some extra protein and a kick from the jalapeño and cumin! With no shortage of flavors like pineapple, cilantro, jalapeño, sweet onion, poblano peppers and your favorite taco toppings, any leftovers from this meatless Monday meal could happily roll over into Taco Tuesday!

Regardless of what you call it, this recipe makes creative usage of the vegetable by brushing it with a sesame oil, coriander and lime mixture, topping it with green onion and red jalapeño then wrapping with foil and barbecuing until tender. Vegans rejoice! This awesome recipe isn’t just meatless, but with a few swaps it’s easily free from all animal products! Making for a rich breakfast or lunch, your butter of choice is sauteed with your milk of choice before ginger, jalapeño, garlic powder and lemon juice are added to make a creamy white sauce. When you add your spinach and corn to the sauce you get a flavor-filled, comfort food-esk creamed corn-spinach combo to enjoy on toast of your choice! *Sriracha encouraged!*
Making time to eat right can be a real hassle, but not with this salad-in-a-jar! There is no shortage of protein from quinoa, black beans and corn, plus the bonus of fiber and healthy nutrients from peppers and tomato! You could even add half an avocado before eating for some extra “UMPH”. This recipe makes 4 servings, making it a perfect meatless Monday meal that keeps on giving!
