Egg Roll Tips:
Egg rolls can be pan-fried, deep-fried, baked, steamed, even boiled, but for a crunchy wrapper, pan-frying is the way to go.
Don’t over-stuff. You want the filling completely sealed in the wonton wrapper or else it will leak out when cooking.
Have a cup of water or beaten egg on the side of your egg roll assembly line to moisten the edges of the wrapper to create the seal.
Make sure your stuffing isn’t too wet or saucy. Too much moisture can cause wrappers to tear. You can thicken anything up with a little rice, meat or veggies.
Keep wonton wrappers moist while assembling by covering wrappers with a damp paper towel.
They don’t have to be savory. You can egg roll-up your favorite sweet ingredients too!
