Cauliflower has broken through as one of the most versatile foods there is! It used to be described as a bland vegetable, but now the world is tapping into cauliflower’s uncanny ability to accentuate the flavors of the food around it – and we can’t get enough! Whether it’s a side dish, appetizer or centerpiece cauliflower is low carb while being a great source of vitamin C, K, protein, thiamin, magnesium, fiber and potassium.

Roast It!

Whether you break it up into florets or go all out with a whole head, roasted cauliflower has the potential to bring many dimensions of flavor to your table! While roasted cauliflower is great when simply tossed with salt, pepper and olive oil, add your favorite spices for some kick! Check out some of our favorite combos to toss together and roast below.

  • Crushed Red Pepper
  • Garlic/Garlic Powder & Parmesan
  • Turmeric
  • Italian Herb Mix (basil, crushed rosemary, thyme, sage, parsley)
  • Curry Powder & Paprika
  • Cajun Mix
  • Taco Seasoning

Bread, Buns & Tortillas!

When combined with cheese, spices and a binder like eggs, you’ve got yourself a relatively low carb, gluten free food that can be enjoyed in place of most grain based breads. Just chop up your cauliflower or pulse in a processor until finely chopped and follow one of these awesome recipes!

Fritters & Tots

Similar to using it in place of grains for breads, tortillas and crusts, you can replace the starchy potato-base of tater tots and fritters with cauliflower too!

Meat Alternative

We often find chicken being the go-to food to toss in buffalo, teriyaki or other sauces, but once you try your favorite sauce on cauliflower you might not go back! Not only is cauliflower cheaper than meaty choices, you do not feel as weighed down afterwards; even after you’ve devoured a whole head! (fun fact: there are just 210 calories in 1 large head of cauliflower!)

Try some of these awesome sauce combos on your cauli! Just roast until browning, then toss it all together! You could also bread your cauli before baking it. It might add to the calorie count, but it sure will add to the satisfaction scale!

Mash It Up!

Just like tater tots and fritters, you can replace starchy potatoes with cauliflower! Its quick, easy and there are so many ways to make them your own. You can keep it light with some olive oil, garlic, salt and pepper or load it up just like you would with regular mashed potatoes! Simply boil your cauliflower until tender, drain, mash and mix the way you would regular mashed potatoes.

Not-Rice!

Pulse your cauliflower in a processor until chunks are small enough to resemble rice (important to pulse, not puree!) and cook away! Cauliflower rice is faster, healthier and just as versatile as grain rice!

Soups & Chowders

When it comes to comfort food, there are few things better than a flavor-filled soup or chowder! Add cauliflower to take it up a notch.

Bake & Casserole

A loaded up casserole can be a meal in itself! For anybody watching their caloric intake or cholesterol, a cheesy baked casserole might not be on the menu every night, but you sure can enjoy one of these awesome casseroles with less guilt knowing that instead of pasta or potatoes all your cheesy goodness is on top of a super light, healthy veggie!

When you’re trying to keep it healthy, salad is always on the menu! Bulk it up a bit with some cauliflower to keep you feeling fuller longer! You could even use some of those saucy delights we mentioned earlier on top of your greens!

Sauces

That’s right! What used to be a cholesterol and caloric nightmare, alfredo sauce gets a makeover with a creamy cauliflower base instead of dairy-based heavy cream. Fettuccini and chicken alfredo may return to your menu! See the recipe for this awesome concoction below!
